• I can’t find the accessibility function in the settings to turn off the voice commentary whenever I make a selection

When you say voice commentary do you mean Audio Description?

On my Sony TV Audio Description is found under,

Settings> System> Accessibility> Audio Settings (Broadcast) if set to Normal Audio Description will be off.

As you probably have a different TV, you haven't told us which one, you gave us the model number of your remote control, the path to the Audio Description setting maybe slightly different.

However you say you are using Sky Stream, if so then you will need to look at the Audio Description settings on that device. The settings on the device will override those of the TV whilst it is being used as a source for viewing.
