the depth of field is dependent on various factors but the most impact has the sensor format and the focal length.

To make it short: the sensor size of the standard handycam is quite small and therefore the possibility to have a shallow depth of field is very limited; you will only have this effect when using a long focal length (tele) and when the iris (aperture) of the lens is fully opened.

If you want to be able to blur the background very strong you need a camcorder with a larger sensor, for example the NEX-VG20.
